I'm not familiar with the Eleven Rack, but assuming it has a preamp out, you should just be able to slave the amp to it. Just connect the preamp out to the Return jack on the amp. You may have to "stub out" the send and input jacks on the amp to get it to work.

It really depends on the sound you are going for. If you think Celestions are too thin you might want a more American voiced speaker (emphasis on the lower mids instead of the uppers). In that case, Eminence Texas Heat's or even Swamp Thang's might be right up your alley.
