I'm thinking about buying the special edition witht the 2X10, but how does it compare to the ht5 1x12?

A 2x10" is going to seem louder because it will move more air. The 1x12 will give better low end response.
If you plan to do a lot of recording, get the 2x10". In my experience, low wattage amps coupled with smaller speakers tend to record like 100 watts of full stack power.

I plan to buy a HT5 as a practice amp, and i played the 1X12 (liked it) so i guess the 2x10 will sound wider but thinner?

To my ears, guitar speakers smaller than 12" have less definition in the low end. So it's not thinner, there's just more emphasis on (and definition to) the mids. Whether that's a good or bad thing all depends on what kind of sound you are going for.
